- 1 1/4 cups butter
- 8 oz. unsweetened baking chocolate (chopped, I like Trader Joe’s the best)
- 2 cups brown sugar (packed)
- 5 large eggs
- 2 tsp. pure vanilla extract (gluten-free)
- 1 cup gluten free flour blend (see below)
- 1/2 cup almond meal (or almond flour, or other nut blend)
- 1/2 tsp. sea salt
- 11 oz. semi-sweet chocolate chips
- 12 oz. white chocolate chips (or chunks, try to use chips with cocoa butter in them)
- 6 candy canes (organic, crushed, see notes)
- 1/2 cup brown rice flour
- 1/2 cup sorghum flour
- 1/4 cup sweet rice flour (also called glutinous rice flour)
- 1/4 cup potato starch (or tapioca starch)
- 1/4 tsp. xanthan gum
