- 7 tomatoes (Medium to large, on the vine if possible quartered or chopped in large chunks)
- 3 Tbsp. extra-virgin olive oil
- 1/2 white onion (finely chopped)
- 3 Tbsp. tomato paste (or Puree, I used canned tomato paste)
- 2 cloves garlic (finely chopped)
- 3 Tbsp. Parmesan (grated fresh, /Romano/Asiago cheese)
- 4 Tbsp. fresh basil leaves (packed, or a handful or two of leaves)
- 1 Tbsp. fresh parsley (or 3-4 sprigs/small handful)
