- 1/2 cup brown sugar (packed)
- 4 oz. vegan butter (1/2 cup or 1 stick, or regular butter if you do dairy)
- 1 egg
- 1/2 tsp. vanilla extract
- 1/3 cup peanut butter
- 1/2 tsp. baking soda
- 1 cup gluten free flour blend (or another high quality blend like GF Jules Gluten Free Mama's Almond blend)
- 1/4 tsp. xanthan gum (omit if your blend already has it)
- 1 cup gluten-free rolled oats
- 1/2 cup powdered sugar
- 1/4 cup peanut butter
- 1 Tbsp. milk (dairy free)
- 6 Tbsp. coconut milk (full fat canned, I used SoDelicious culinary coconut milk)
- 1 cup chocolate chips (dairy free, I used Enjoy Life Foods)
