- 1 1/4 cups boiling water
- 2/3 cup non dairy milk (I used So Delicious Coconut Milk)
- 1 Tbsp. fresh lemon juice (or apple cider vinegar)
- 3/4 cup buckwheat flour (freshly ground)
- 1/4 cup meal (chia seed)
- 1/2 cup brown rice flour
- 1/2 cup tapioca flour
- 1 1/2 baking powder (ts of)
- baking soda (1/2 ts. of)
- sea salt (1/2 ts. of)
- 1/2 cup coconut sugar (organic, sucanat, or your preferred powdered sweetener)
- 1/3 cup oil (baking, : grapseed, melted coconut oil or light olive oil)
- 10 drops liquid (pure vanilla stevia, I used NuNatural's, optional)
