- 3 Tbsp. butter oil
- 3 Tbsp. all purpose gluten free flour (I use Bob's Redmill because it has tapioca in it which is the thickener)
- 2 cups milk (I use 2% but if you wanted to get crazy wild, you do half milk and half cream)
- 1/2 onion (a medium, diced.)
- 1/2 tsp. garlic powder
- salt
- pepper
- 2 cups grated cheddar (plus extra if you plan to top ramekins and bake)
- 1/4 cup goats cheese (soft, I use a garlic / herb flavored one)
- 1/2 cup asparagus peas (blanched and chopped, optional)
- 4 cups noodles (cooked macaroni, use your favorite gluten free brand)
