I used coconut flour and will next time just use honey and leave out the sugar but it was the best gluten free baked good item I have had yet! It had a sweet but spicy taste. mmmm

I substituted canned cherries for the apples, used brown sugar only and used coconut oil. Batter seemed a bit dry so added a few tablespoons of the cherry juice. Very Yummly!
