- 120 grams mixed dried fruit (currants; raisins; sultanas, 150g hydrated weight – soaked in orange juice and then drained)
- 70 mL orange juice (for soaking the fruit)
- 60 grams mixed peel (chopped)
- 1 Orange (optional – finely grated)
- 160 grams tapioca starch
- 145 grams potato starch
- 85 grams oat flour (For no oat version sub with sorghum flour)
- 70 grams sorghum flour (or buckwheat flour For no oat version sub with brown rice flour or buckwheat flour)
- 5 grams fine sea salt (= 1 level teaspoon)
- 3 grams xanthan gum (= 1 level teaspoon)
- 3 tsp. ground cinnamon
- 1 tsp. mixed spice
- 20 grams active yeast (Dried, The type that needs activating, I use Allinson's)
- 3 tsp. honey (for preference – or golden caster sugar)
- 60 grams warm water (hand)
- 3 large eggs (UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 28 grams psyllium husk (ground)
- 100 grams full-fat milk
- 1 1/2 tsp. orange extract (or vanilla extract)
- 60 grams golden caster sugar
- 50 grams unsalted butter
- 200 grams full-fat milk
- 1 Tbsp. sunflower oil
- 1 dash milk
- 1 egg
- 30 grams potato starch
- 20 grams sorghum flour (or buckwheat flour)
- 40 grams milk (approx)
- 1 Tbsp. light brown sugar (soft)
- 2 Tbsp. water
