- 4 cups old-fashioned rolled oats (— use certified gluten free oats to ensure the granola is truly gluten-free; see blog post above for more info)
- 1 cup nuts (choice — I use a blend of pecans and almonds)
- 2 Tbsp. flaxseed meal
- 3/4 tsp. kosher salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. pumpkin pie spice (optional)
- 1 pinch ground cardamom (optional)
- 1/2 cup pure maple syrup (or honey)
- 1/3 cup coconut oil (melted, or light olive oil)
- 1 large egg white (— whisked until frothy, see notes to make vegan)
- 1 1/2 tsp. vanilla extract
- 1/2 cup coconut flakes (unsweetened, — or swap an additional ½ cup raw nuts)
- 1/2 cup dried fruit (— optional; chopped if large, I used dried cranberries)
- 1/2 cup chocolate chips (— optional)
