- 1 1/4 cups milk (we used Lactaid)
- 2 large eggs
- 2 Tbsp. melted butter (or light olive oil if you cannot have milk products)
- 1 cup all-purpose gluten-free flour (mix, we used Bob’s Red Mill from Costco)
- 1/2 tsp. salt
- 1 tsp. sugar
- 1 tsp. vanilla (Do not skip! Took away from the off flavor gluten-free flour can give.)
- 1/8 tsp. gluten-free baking powder
- canola oil (to grease skillet)

Wonderful! Could hardly tell they were gluten free. Be prepared to use more milk as the batter tends to be quite thick at first.

Perfect!!! Great recipe for my daughter with Celiac! We used the Bobs Red Mill baking flour and it was great! Just the right amount of Vanilla. New Sunday breakfast tradition here!!

The batter for these crepes were WAY to thin! we decided to turn them into pancakes by just adding a little more flour and the pancakes turned out wonderful!
