- 1 cup coconut oil (melted and cooled to touch)
- 1 3/4 granulated sugar
- 2 eggs
- 1 1/2 tsp. vanilla
- 1 cup coconut milk (canned, you will use the rest for the frosting*)
- 1 cup chocolate chips (dairy free)
- 3 cups shredded zucchini (finely, about 2-3 zucchinis)
- 3/4 cup coconut oil (room temperature)
- 4 1/2 cups powdered sugar
- 2/3 cup coconut milk (remaining milk from cake)
- 3/4 cup cocoa powder
- 1 pinch salt
- 1 tsp. vanilla extract

This was amazing. i loved the texture. I added powder penit butter to the icing ans it was decadent! If you dont have buckwheat or oat flour you can make your own from wholw in a single serve blender.
