- 1/2 cup potato starch (or tapioca starch)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 3/4 tsp. xanthan gum
- 1/2 cup sucanat (organic, dried cane juice)
- 2 Tbsp. light olive oil
- 1/2 tsp. vanilla
- 3 egg whites (organic free-range, depending on the size, you are looking to get 1/4 cup of liquid, beaten until frothy*)
- 1/2 cup warm water (more as needed, up to 3/4 cup)
- 1/3 cup flax seeds (organic, I used them whole, you could certainly grind them first)
- 9 oz. semi sweet chocolate chips (organic)
