- 3/4 cup whole milk (or coconut milk)
- 4 eggs (pastured)
- 1 1/2 cups pure cane sugar (organic)
- 1 cup softened butter
- 2 Tbsp. apple cider vinegar (I know this is a strange ingredient - but it helps with the rise - don't leave it out! I promise it won't make it taste bad!)
- 3 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1 1/2 cups brown rice flour
- 2/3 cup potato starch
- 1/3 cup tapioca flour
- 1/2 tsp. sea salt
- 1 Tbsp. baking powder (aluminum free)
- 1 tsp. xanthan gum
- 10 oz. chocolate chips (bag Enjoy Life)
- buttercream frosting (VANILLA)
- 2 cups softened butter
- 3 1/2 cups cane sugar (organic powdered)
- 2 tsp. vanilla extract
- 2 Tbsp. coconut milk (or whole milk)
- chocolate chips (for decoration, optional)
