- 1/2 cup dark brown sugar
- 2/3 cup unsalted butter (cold, cut into pieces)
- 1 cup finely chopped pecans
- 8 oz. cream cheese (bars of gluten free, softened)
- 1 cup granulated sugar
- 2 eggs
- 1/4 tsp. salt
- 1 tsp. gluten-free vanilla
- 2 cups gluten free sour cream
- 3/4 cup granulated sugar
- 1/2 tsp. almond extract (gluten free)
- 1/2 lemon

After years of trying lots of cheesecakes, this one is by far our favorite. It is the top family requested recipe for special occasions and delights every time. I sometimes make half of this recipe in an 7-8 inch spring form. I recommend adding the foil under the pan during baking, especially needed after the topping is added. Thank you to your Aunt Barbara for perfecting this wonderful treat.
