- 230 mL full-fat milk
- 1 Tbsp. lemon juice
- 1 tsp. bicarbonate of soda
- 140 grams mature cheddar cheese (grated)
- 1 large egg (UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 1 egg (lightly beaten with a fork)
- 30 grams mature cheddar cheese (grated – to sprinkle on top)

- 2 tsp. xanthan gum
- 1/4 tsp. fine sea salt
- 50 grams ground almonds
- 1 Tbsp. baking powder
- 2 tsp. bicarbonate of soda
- 80 grams unsalted butter (– cold and cubed)
- 1 large egg (– beaten)
- 120 grams mature cheddar cheese (extra, grated + extra for sprinkling on top)
