- 1 gluten (recipe, Free Deep Dish Chicago-Style Pizza Dough, I used the Deep Dish Chicago-Style Pizza Dough from page 193 of GFOAS Bakes Bread, but Deep Dish Pizza Dough from the blog would work just fine, too, chilled)
- 1 lb. lean ground beef
- 1 Tbsp. ground cumin
- 1 tsp. chili powder (Mexican)
- 1 tsp. spanish paprika (smoked)
- 1/2 tsp. dried oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. garlic powder
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. crushed red pepper flakes
- neutral oil (for frying, I used a mixture of canola oil and Spectrum nonhydrogenated vegetable shortening)
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- shredded lettuce (for serving)
- tomatoes (Chopped and seeded, for serving)
- sour cream (for serving)
