- 2 cups all purpose gluten free flour (you may need to add 1 tsp of xanthan or guar gum if your flour mix doesn’t already have it)
- 2 Tbsp. turbinado sugar (or whatever natural sugar or sweetener you prefer)
- 1 tsp. gluten free baking powder
- 1 tsp. baking soda
- 1 Tbsp. unfiltered apple cider vinegar
- 1/4 tsp. sea salt
- 1 1/4 cups buttermilk (or 1 cup plus 3 tablespoons milk + 1 tablespoon raw apple cider vinegar)
- 1 large egg (or egg replacer such as Ener-G)
- 1/2 tsp. vanilla extract (organic)
- 1 lb. bacon (cooked nitrate-free, + bacon grease)
- 2 Tbsp. organic coconut oil (+ a little extra for cooking, optional if you run out of bacon grease)
