- 2 cups all purpose gluten free flour (I used Better Batter, plus more for sprinkling)
- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1/4 cup cornstarch
- 6 Tbsp. nonfat dry milk
- 1 cup gluten free oat flour (certified)
- 1/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. kosher salt
- 3/4 cup gluten (certified, free old-fashioned rolled oats)
- 3/4 cup granulated sugar
- 1/2 cup plain yogurt (at room temperature, sour cream will also work)
- 2 Tbsp. neutral oil (like canola, grapeseed, or sunflower oil)
- 2 tsp. pure vanilla extract
- 1 egg (50 g, weighed out of shell at room temperature, beaten)
- 1/4 cup lukewarm water (plus more as necessary)
- 6 oz. strawberry preserves (seedless)
