It is far the best recipe for pan cake if you want to stay away from eggs milk and gluten. My kids loved it, and that just says it all.

Good base recipe. Batter seemed dry/thick so added 1 egg (could easily add more almond milk or another flax egg). Batter didn’t spread to flat, but in keeping silver dollar size, gave a nice moist texture to chew, not rubbery once cooled. Banana flavor mild, don’t foresee problem serving with chocolate chips. I served with blueberry compote. Tasted great for Gluten Free. Used Pillsbury’s AP blend of rice potato tapioca and pea flour. Will freeze and see how these hold up.

Delicious, as long as you keep the pancakes dollar size and fry in coconut oil. Don't pre sift the flour.
