  • 1/2 cup palm sugar
  • 4 bananas (2 mashed, 2 sliced)
  • 3/4 cup rice flour
  • 3/4 cup all purpose flour
  • 1/2 cup coconut milk
  • 1 large egg
  • canola oil (for frying)
  • ice cream (to serve, optional)
  • lime wedges (to serve)

    Directions

    1. Place the palm sugar and 1/4 cup water into a small saucepan and bring to a boil. Reduce heat and simmer until mixture reaches a syrup consistency.
    2. Place the mashed banana, flours, coconut milk and egg into a bowl and mix thoroughly to combine.
    3. Heat a little oil in a frying pan over medium heat and place a heaped spoonful of batter into the pan. Cook until bubbles appear on the surface, then turn and cook until golden.
    4. Place the pancakes on serving plates and top each with sliced banana, a scoop of ice cream (if desired) and a lime wedge. Drizzle with palm sugar syrup.
