  • 1/3 cup dried fruit (chopped dates, raisins, diced apricots, or cranberries)
  • 1 teaspoon baking powder
  • 1 1/2 cups milk (dairy- or plant-based)
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon oil (OR dairy-free butter substitute OR real butter, if you consumer dairy, You may omit the fat in this recipe, if you like, but the texture will suffer slightly.)
  • 1 egg (lightly beaten, sub: Egg replacer of your choice to equal 1 egg; I recommend using a powder egg replace, prepared according to package directions or a flax or chia “egg”)
