- 4 cups vegetable oil (for frying)
- 2 cups white rice flour
- 2 tsp. kosher salt
- 2 tsp. paprika
- 1 tsp. garlic powder
- 1/2 tsp. baking soda
- 2 large egg yolks (room temp)
- 1 1/2 cups seltzer water (cold, plus more as needed)
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 1/2 Tbsp. fresh lime juice
- 1 Tbsp. chipotle pepper in adobo (chopped)
- 1/2 tsp. garlic clove (chopped)
- 1/4 tsp. kosher salt
- 4 cups green cabbage (shredded or thinly shaved, about 1 small green cabbage)
- 1 Orange
- 6 Tbsp. fresh orange juice (from 1-2 oranges)
- 1 1/2 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- 1 tsp. honey
- 1/4 tsp. kosher salt
- 12 corn tortillas
- 5 radishes (small, halved and thinly sliced, optionally quick pickled, below, optional)
- cilantro (lime and orange wedges, optional)
- 1/4 cup boiling water
- 1 tsp. kosher salt
- 1 tsp. sugar
- 1/4 cup rice vinegar
