  • 12 granny smith apples (cored, peeled, sliced)
  • 1 cup sugar
  • 1 cup ground almonds
  • 1 cup desiccated coconut
  • 6 1/2 tablespoons butter (chopped)
  • custard (warmed, or heavy cream, to serve)

    Directions

    1. Preheat oven to 350°F. Lightly grease a 9 1/2 inch pie dish. Place apples in a microwave-safe bowl and cook on HIGH (100%) power for 2-4 mins, until slightly tender. Add 3/4 cup sugar and let cool.
    2. Combine ground almonds, coconut and remaining sugar. Cut in butter until mixture resembles coarse crumbs. Add 2 tsp ice water and mix until combined. Press evenly over base and sides of dish. Bake for 10-12 mins.
    3. Fill pie shell with apple mixture. Bake for 15-20 mins, until edges are golden. Let cool to room temperature before slicing. Serve with warmed custard.
