Great recipe! I didn't have walnuts or vanilla so I subbed them with a tbs maple syrup and some whole rolled oats ( about 1/3 a cup) to help keep the consistency of the original.
I also upped the amount of cinnamon.
Did end up slightly soda- ish, but I could only just taste it.
