- 1/4 cup millet flour (plus 2 tablespoons, plus more for rolling the tortillas)
- 1/4 cup brown rice flour
- 2 Tbsp. tapioca flour
- 2 Tbsp. cornstarch
- 1/2 tsp. fine sea salt
- 1/2 tsp. baking powder
- 1/2 cup cool water
- 2 Tbsp. olive oil
- salt (as needed)
- 1 Tbsp. rice vinegar (or other neutral vinegar)
- 8 eggs (super good)
- 1 1/2 cups black beans (cooked, or 1 15-ounce can)
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. garlic powder
- 1/4 tsp. smoked paprika
- 8 oz. pepper jack (or other tasty melting cheese, grated)
- 1 handful Cilantro leaves
- 1 cup cherry tomatoes (halved)
- 1 avocado (large ripe, peeled, pitted, sliced)
