- 1 Tbsp. coconut oil (or vegetable oil, olive oil)
- 1/2 cup shallot (chopped, 2 shallots, or ½ an onion)
- 2 Tbsp. turmeric (chopped, peeled, see notes)
- 2 Tbsp. ginger root (chopped, peeled)
- 4 garlic cloves (rough chopped)
- 1 pt. carrot juice
- 2 cups veggie
- 2 cups water
- 1 lb. carrots (chopped)
- 1/2 tsp. salt (then more to taste)
- 1 can coconut milk (saving some for swirling if you want.)
- 1 tsp. curry powder
- 1/2 tsp. apple cider vinegar (or lime juice)
- 1/2 tsp. soy sauce (or Braggs liquid amino – this is optional, added for depth.)
- 1 tsp. maple syrup
- 2 cayenne (to taste)
- mint (optional)
- cilantro (optional)
