- 4 Tbsp. extra-virgin olive oil (divided)
- 1 orange bell pepper (large, diced)
- 2 cups sweet onions (such as Vidalia, diced)
- 2 Tbsp. garlic (minced)
- 1 lb. hot sausage (Italian, removed from casing)
- 1 lb. ground beef (80/20)
- 1 lb. ground bison (pre-packaged and available in most supermarkets)
- 12 oz. tomato paste
- 15 oz. tomato sauce (Glenn recommended Contadina so we used that brand)
- 16 oz. red kidney beans, rinsed and drained (dark)
- 22 oz. beans (Bush’s Grillin’, Bourbon and Brown Sugar)
- 1 cup brown sugar
- 2 Tbsp. red pepper flakes (or less for less heat)
- 1 Tbsp. garlic powder
- 1 1/2 Tbsp. paprika
- 1 Tbsp. chili powder
- 1 tsp. freshly ground black pepper
- 1 tsp. kosher salt
- 1 tsp. cayenne pepper (or less for less heat)
- 1 lime
- shredded cheddar cheese (for garnish, optional)
- saltine crackers (to serve with chili, Glenn says this is a must)
