- 3 Tbsp. lemon juice (freshly squeezed)
- 1 tsp. grated lemon zest
- 3 Tbsp. honey
- 1 tsp. minced garlic
- 1 tsp. aleppo pepper (or sweet paprika)
- 1 Tbsp. mint (chopped)
- kosher salt
- freshly ground black pepper
- 1 1/2 lb. spanish mackerel fillets
- 8 oz. fennel (shaved, about one 10 ounce bulb)
- 2 scallions (thinly sliced)
- 1/2 cup mint leaves (small, or large leaves torn)
- 1 blood orange (juice reserved–use a regular orange if blood oranges aren’t available)
- 3 cups arugula
- 1/2 cup chervil leaves (reserve a few chervil sprigs for garnish, optional)
- 2 Tbsp. black olives (chopped pitted cured)
- 3 Tbsp. toasted pine nuts
