Flavor was wonderful!! But I wanted crispy and they came out crispy edge and soft middle. Could be a difference in ovens? My husband and son ate them to fast to see if they'd harden up.

These couldn’t be mistaken for anything but ginger cookies! I only used 1/2 cup of brown sugar and added 1/8 tsp. of cardamom for fun. I tried both the chewy and crisp instructions and they both came out exactly as written. They are nice and small; the perfect (mostly) healthy snack!

Very tasty and gingery. Came out crispy edges and chewy centers. I cooked for the temp and time for crisp cookies. It was a humid day, that may have had something to do with it. Will definitely make again, cooking at higher temp and maybe not a rounded teaspoon measure.
