- 1 stick unsalted butter (at room temperature)

- 3 1/2 cups plain flour (plus more for dusting and rolling)
- 3 egg whites (90g | 3.1oz)
- 5 cups powdered sugar (icing, shifted, more, or less as needed)
- 1/2 tsp. cream of tartar
- 1 tsp. vanilla extract (optional)
- 1 lb. mascarpone cheese (full-fat)
- 2 cups icing sugar
- 1 cup white chocolate chips
- 3 Tbsp. ginger syrup (Opies stem)
- 4 Tbsp. stem ginger (Opies, very finely diced)
