- 110 grams black treacle (unsulfered molasses)
- 110 grams golden syrup (use corn/agave syrup if you can't get this)
- 225 grams dark brown sugar (soft, not packed)
- 2 medium eggs
- 300 mL whole milk
- 350 grams flour (scant 3 cups plain, all-purpose)
- 2 tsp. bicarbonate of soda (baking soda)
- 4 tsp. ground ginger
- 3 tsp. ground cinnamon
- 1 pinch ground cloves (I used allspice)
- 1 pinch nutmeg
- 1 pinch salt
- 250 grams caster sugar (1 cup + 2 tbsp)
- 300 mL cream (double, heavy)
- 50 grams unsalted butter
- 3 tsp. whiskey
- 2 tsp. flaky sea salt
- 200 grams unsalted butter (7.5 oz / 1 cup minus 1 tbsp)
- 330 grams icing (powered sugar)
- 100 mL caramel sauce (scant 1/2 cup salted whiskey, see above)
- crystallised ginger (for decoration., optional)
