- 6 Tbsp. golden syrup (sub more brown sugar)
- 2 tsp. fresh ginger (finely grated)

- 240 mL milk
- 5 1/2 cups all purpose flour
- 3 tsp. baking soda
- 1 pinch salt
- 8 tsp. ground ginger
- 3 tsp. ground cinnamon
- 2 tsp. ground allspice
- 1 tsp. cardamom
- 215 grams marmalade (medium cut, I used Fortnum & Mason’s champagne marmalade because they sent me some and totally merry! You can order Christmas Hampers here)
- 250 grams whipped cream (heavy)
- 1/4 cup juniper berries
- edible gold spray (optional)
