  • 0.5 liters vegetable broth
  • 500 grams pumpkin (cut into cubes)
  • 1 green onion
  • 2 cups heavy cream
  • ginger root
  • extra-virgin olive oil
  • ground nutmeg
  • salt

    Directions

    1. Saute 3 tablespoons of olive oil in a pan with the finely sliced green onion. Add the pumpkin and some grated ginger.
    2. Stir to flavor and cook for approximately 10 minutes on medium heat.
    3. Add the hot broth and cook on low heat for approximately 30 minutes (the pumpkin should become very soft).
