- 3 pears (,cored and cut into thin wedges (I like Bartlett because they're crisp and hold up well, but any pear will do!)
- 1 ginger (thumb-sized piece of, sliced thinly)
- 1 lemon (medium)
- 9 whole cloves
- 750 mL white wine (Sauvignon Blanc, Pinot Gris, or something else on the lighter, dryer side works best)
- 1/2 cup white rum
- 1/4 cup brandy
- 36 oz. ginger beer (4.5 cups, chilled, I use this Extra Ginger Brew)
- 2 Tbsp. granulated sugar
- 1/4 tsp. ground ginger
