- coconut oil spray (for the pan)
- 1/2 cup blanched almond flour
- 1/2 cup white rice flour (sweet)
- 6 Tbsp. chestnut flour (or use ½ cup oat flour if you don’t have chestnut flour)
- 2 Tbsp. tapioca flour (/starch)
- 1/4 cup cane sugar (granulated)
- 1/8 tsp. fine sea salt
- 6 Tbsp. vegan butter (cold, salted, such as Miyoko’s, cut into 1⁄2-inch cubes, dairy butter works, too)
- 1 tsp. vanilla extract
- 1 cup raw cashews (soaked, see headnote)
- 2 Tbsp. chia seed (finely ground, preferably white – I grind whole seeds in a coffee grinder)
- 1/2 cup maple syrup (preferably grade A amber)
- 3 Tbsp. lemon juice
- 1 inch ginger root (piece, peeled and finely grated, 1 scant tablespoon)
- 1 pinch salt
- 1/2 cup water
- 1/2 cup coconut oil (melted, preferably refined)
- 3/4 tsp. vanilla paste (or extract, or seeds from 1 vanilla bean)
- 1 lb. figs (2 dozen medium, trimmed and sliced scant ¼ - inch thick)
