- 3/4 cup sorghum flour
- 1/2 cup millet flour (organic)
- 1/2 cup brown rice flour (organic)
- 1/2 cup flour (amaranth)
- 1/2 cup tapioca starch
- 1 cup light brown sugar (firmly packed organic)
- 3/4 cup soy (Earth Balance, Free Spread, at room temperature for 15 minutes)
- 1/4 cup unsulphured molasses (organic, can use blackstrap if you like that deeper flavor)
- 3 Tbsp. unsweetened applesauce (organic chunky organic, I use Trader Joe’s)
- 1 1/2 tsp. ground cinnamon (organic)
- 2 tsp. ground ginger (organic)
- 1 tsp. ground cloves (organic)
- 2 tsp. baking soda (aluminum free)
- 1/4 tsp. kosher salt
- 1/8 cup cane sugar (organic evaporated)
- 1/4 cup demerara sugar
- crystallized ginger (handful GF, thinly sliced into small pieces, optional for decoration)
- 3 oz. chocolate chunks (dark, I use Enjoy Life)
- 1 Tbsp. soy (Earth Balance, Free spread)
