Perfect and delicious — substituted things that a home cook wouldn’t have - used basil and lime zest instead of curry leaves and used fresh jalapeños and a dash of Thai pepper oil instead of Indian chili powder. And used smoked sea salt instead of table salt to help with smokiness since I didn’t have chili powder.
