- 500 grams mixed mushrooms (larger ones thickly sliced, smaller ones halved or quartered)
- 200 mL double cream
- 3 thyme sprigs (leaves picked, plus extra to serve)
- 1/2 lemon
- 50 grams Parmesan (or vegetarian hard cheese, finely grated)
