- 1 vegetable stock (cube or bouillon)
- 400 grams cherry tomatoes (approx, roasted as in this recipe, without the balsamic)
- olive oil (for frying)
- 1/2 stick celery (chopped)
- 1 onion (large, chopped)
- 2 cloves garlic (finely chopped)
- 1 red chilli (small, deseeded & finely chopped)
- 200 grams chopped tomatoes (tinned)
- 1 tsp. marmite
- 3 Tbsp. sweetcorn (kernels)
- 210 grams kidney beans
- 1 tsp. dried oregano
- 1 tsp. dried basil
- black pepper (good grind)
- 7 walnuts (shelled & chopped)
- 90 grams mature cheddar cheese (grated, or suitable vegetarian alternative)
- 100 grams goats cheese (soft, optional - cut into cubes or slices)
