- 1 onion (sliced)
- 4 sticks celery (chopped)
- 8 cloves garlic (crushed or finely sliced)
- 1 low sodium chicken broth (carton of, or your own stock)
- 1 pkg. frozen spinach (or a bag of fresh baby spinach)
- 1 can diced tomatoes (~14oz)
- 1 pkg. pasta (dried tortellini, I like Barilla)
- oil (A little, or spoon of butter)
- red pepper flakes (Optional –)
