This was one of the best cakes I’ve ever made, but it took almost 4 hours to make. It’s definitely not a weeknight cake (yes, I’m crazy enough to make those). I recommend making only half the rum syrup. Also, you need two mixers and lots of bowls. Be ready for lots of dish washing. Nevertheless, this is a fabulous cake. It is rich and moist and quite impressive. *There is plenty of frosting and filling to snag some spoonbills. :)
