- 1 Tbsp. olive oil
- 3 onions (medium, peeled and thinly sliced, should equal 4 cups sliced onions)
- 3 lb. chicken (cut into 10 pieces)
- 6 tomatoes (medium ripe, coarsely chopped, I do not peel them, but feel free to peel)
- salt
- ground black pepper
- 1 tsp. spice mix (Georgian, khmeli-suneli, skip if you don't have it)
- 5 cloves garlic (peeled and coarsely chopped)
- 1 cup chopped fresh cilantro (you can also add other herbs: parsley, tarragon basil, dill)
- 1/8 tsp. hot red pepper flakes (dried, or chili pepper, adjust to taste)
