- 4 Tbsp. potato starch (or corn starch)
- 2 egg yolks
- 1 Tbsp. soy sauce
- 3 cups peanut oil (for frying)
- 1/2 cup pheasant (or chicken stock)
- 1 Tbsp. soy sauce
- 1 Tbsp. sugar (or more if you want it sweet)
- 1 Tbsp. chinese black vinegar (or malt vinegar)
- 2 Tbsp. tomato paste (mixed with 2 tablespoons water)
- 1 tsp. potato starch
- 1 lb. meat (pheasant breast, cut into bite-sized pieces)
- 3 Tbsp. peanut oil (lard or vegetable oil)
- 8 chiles (dried hot, broken in half and seeds shaken out, use less if you don’t want it spicy)
- 2 inches ginger (piece of, peeled and minced)
- 3 garlic cloves (sliced thin)
- 6 green onions (chopped)
- 2 tsp. sesame oil
