- 2 tsp. chili paste (Note 1)
- 1/4 cup light brown sugar (very lightly packed)
- 2 Tbsp. olive oil
- 1 cup red onion (thinly sliced)
- 3/4 cup sliced carrots (thinly, sliced on the diagonal, 2 large carrots)
- 1 cup snow peas
- 2 cups broccoli florets (chopped)
- 1 cup red pepper (thinly sliced)
- 1 Tbsp. minced ginger (EACH:, finely chopped garlic)
- 2 cans chickpeas (drained and rinsed)
- sesame seeds (optional)
- thinly sliced green onions (optional)
- cooked rice (Optional:, or cauliflower rice for serving Note 2)
