- 2 pickling cucumbers (small Kirby, cored, seeded and diced)
- 1/2 cup white onion
- 1/2 cup green grapes (cut in half)
- 1/2 cup fresh mint (slivered, or basil, optional)
- 1 onion

- 3 sprigs fresh flat-leaf parsley
- 1 bay leaf
- 1 cup green lentil (see Note)

- 2 oz. serrano ham (or proscuitto)
- 2 Tbsp. sherry vinegar (preferably aged, we, of course, used more)
- 1 Tbsp. red wine vinegar (best-quality)
- 1 Tbsp. chicken stock (or broth, or water)
- 1 tsp. honey
