- zucchini (We also grilled, on the side!)
- filet mignon (or Use New York strip)
- 4 grape tomatoes (th instead of)
- 1 Orange (or like red, yellow)
- shallots (instead of red onion, or leave it out)
- 4 tsp. chili powder
- 2 tsp. garlic
- 1 tsp. ground cumin
- 1 tsp. oregano
- 1/2 tsp. ground black pepper
- 1/2 lb. boneless beef sirloin steak (trimmed and cut into 1-inch pieces)
- 2/3 cup orzo pasta (dried)
- 2 cups fresh corn kernels
- 1 medium bell pepper (chopped)
- 1/2 cup red onion (thinly sliced)
- 2/3 cup grape tomatoes (halved)
- 1 tsp. lime zest
- 1/4 cup lime juice
- 2 Tbsp. fresh cilantro (chopped)
- 2 Tbsp. olive oil
