- 1 lb. frozen spinach
- 2 tsp. olive oil
- 1 small onion (diced)
- 10 cloves garlic (minced)
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 15 oz. chickpeas (drained and rinsed)
- 2 Tbsp. lemon juice (fresh-squeezed)
- 2 tsp. fresh dill (can sub 1 teaspoon dried dill in a pinch!)
- 1/2 tsp. black pepper
- salt (to taste)
- water (as needed)
- 2 cups white rice (or cooked brown, see my Rice Guide)
