- 1 garlic (Full head of, topped and roasted)
- 15 oz. white beans (– drained, rinsed, and blotted on a paper towel.)
- 1/4 cup olive oil
- 2/3 cup tahini (– I used jarred but you can make your own)
- 6 Tbsp. lemon juice (fresh squeezed)
- 1 tsp. lemon zest (fresh)
- 1 Tbsp. ground cumin
- 1 tsp. smoked paprika
- 4 Tbsp. water (more or less)
- 1/2 cup sun dried tomatoes (in olive oil, roughly chopped – I used jarred)
