  • 2 pounds red potatoes
  • 1 teaspoon chopped fresh sage
  • 3 cloves garlic (peeled and halved)

    Directions

    1. Preheat oven to 425°.
    2. Melt I Can't Believe It's Not Butter!® made with Olive Oil Spread in shallow roasting pan in oven about 2 minutes. Stir in potatoes, sage and garlic. Season, if desired, with salt and ground black pepper.
    3. Roast, stirring twice, 40 minutes or until potatoes are golden and crisp.

    I had to tweek these measurements a lot and this still tasted bland to me. I made 1lbs of potatoes (instead of 2lbs) and then upped the fresh sage to 1 Tbl. There is no way that 1 tsp would have been enough for 2 lbs of potatoes like the recipe originally states. The only thing that seems to save these potatoes is that they were basically frying in the butter while in the oven. I give this recipe 2 stars because it really was just "so-so" but I think it can be tweeked a bit more and made into a winner. I think I may try to sprinkle a bit of shredded parmesan cheese next time.
