Ingredients

1 SERVINGS
- 1 roll ciabatta
- 1 tsp. garlic
- 3 Tbsp. yogurt (Double thick)
- 2 Tbsp. mayonnaise
- 1 gherkin (finely chopped)
- 1/2 onion (Small, finely chopped)
- 1/2 avocado
- 2 eggs
- fresh mint leaves (finely chopped)
- salt
- pepper
- paprika
- olive oil

Directions
- In a bowl mix together yogurt, mayonnaise, chopped onion, chopped fresh herbs, chopped gherkin, garlic, some salt and pepper with a drizzle of olive oil.
- Slice roll in half and toast in a pan lightly oiled with olive oil.
- Either fry eggs or poached them softly. Place on top of toasted roll or ciabatta. Add yogurt mixture on top of eggs, top with a few slices of avocado and sprinkle with paprika and olive oil.
