- 1 tsp. kosher salt (4.5 g)
- 1 tsp. garlic powder (1.5 g)
- 3/4 cup water (180 g)
- 1 Tbsp. unsalted butter (14 g)
- 2 scallions (4 g, thinly sliced)
- oil (for the bowl and skillet)
- 2 qt. water (1893 mL, for water bath)
- 1/4 cup baking soda (60 g)
- 1 large egg yolk (19 g)
- 1 Tbsp. water (15 g, for topping)
- 1 tsp. kosher salt

Directions
- EQUIPMENT: KitchenAid® Stand Mixer, KitchenAid® Dough Hook Accessory, small saucepan, measuring cups/spoons, medium saucepan, rubber spatula, spider strainer or slotted spoon, small bowl, pastry brush, 9-inch cast-iron skillet or any shallow baking dish, kitchen shears, instant-read thermometer
- Make the Dough: In the bowl of a stand mixer fitted with the dough hook, combine 2 cups (250g) flour, yeast, kosher salt and garlic powder.
- In a small saucepan, heat the water and butter over medium heat until an instant-read thermometer registers between 110°F/43°C and 120°F/49°C. Slowly add the warm water mixture to the flour mixture in the stand mixer bowl and combine with a spatula until shaggy dough forms. Sprinkle in scallions.
